The Secrets to Ring-Shaped Coffee Cake

Most homemade coffee cakes are pretty plain. When we want something fancier for the holidays, we go with a yeasted coffee cake with buttery layers of rich dough, a sweet almond filling, and a flourish of sliced nuts and white icing.

Once we finalized the filling (a mixture of cream cheese and almond paste) and dough (which we sweetened with honey instead of sugar), we focused on the shape. The method ended up being surprisingly easy: The almond filling is placed on the dough, which has been shaped into a rectangle, then the whole thing is rolled up, formed into a circle, and cut to create a floral pattern that exposes some of the filling. Thats all it took to get the shape ofand remove the mystery fromhomemade ring-shaped coffee cake.

Making the Coffee Cake

1. After rolling the dough in an 18 by 9-inch rectangle, spread a 1-inch-wide strip of the filling about 1 inch above the bottom edge of the dough.

2. Loosen the dough from the counter with a bench scraper (or metal spatula) and carefully roll the dough into an even cylinder. Pinch the seam to seal.

3. Transfer the dough log to a parchment-lined baking sheet and shape into a ring. Make about 11 cuts around the outside of the ring using scissors, spacing them 1 to 1 12 inches apart.

4. Twist each piece of dough cut side up.

Secrets to Parker House Rolls

The epitome of thin-crusted, fluffy-crumbed American rolls, Parker House rolls are pillowy soft, a little sweet, and packed with butter. They owe their name to Bostons famed Parker House, a hotel that has been a bastion of Brahmin hospitality since the middle of the nineteenth century.

Truth be told, the Parker House roll is pretty much a standard dinner rollits the shape that sets it apart. And that shape relies on forming the dough into balls using the friction created between the moisture in the dough and the work surface. Once in individual balls, the best way to shape the dough is to lightly flatten it with your palms and then roll it into an oval shape with a small French-style rolling pin or short dowel. When doing this, its important to keep the edges thicker than the center so that theyll adhere to each other when the dough is folded and not puff open during baking. Be sure to do thisif you lose that all-important shape, you lose the Parker House name.

Shaping Parker House Rolls

1. Gently stretch the dough into two even logs. Using a dough scraper (or knife), divide the dough into evenly sized pieces.

2. Drag the dough in small circles over a clean counter using a cupped hand, until the dough feels firm and round. It should feel like the dough is spinning underneath you but not turning over.

3. Use the palm of your hand to flatten each roll into a -inch-thick circle.

4. With a floured rolling pin, gently flatten out the center of each dough circle, leaving the edges thick. This should push the dough into an oval shape with a depressed middle.

5. Lightly brush the dough with melted butter, then fold in half and gently press the dough together at the edges to seal.

Secrets to Poached Pear and Almond Tart

A pear-almond tart doesnt quite have the glamorous sophistication of a fresh fruit tart. Its more like the girl next doorwholesome and fresh-faced, with a quiet, classic beauty. But as a dessert with several componentsa tender crust, frangipane (almond) filling, and fragrant poached pearsthis classic French tart comes with risks.

When it came to assembling the dessert, we hit several snags before we decided on the perfect presentation. First, we used too small a tart pan and werent able to fit all the pears in it. Then we tried using uncut pear slices and balked as the force needed to cut through the pear dislodged the frangipane filling. In the end, slicing the pears crosswise into -inch slices made for a stunning tart. But as they baked, they released moisture that turned the layer of frangipane immediately around them sticky and wet, which risked reaching the crust. To this end, its important to wick away the excess moisture with paper towels from the pears before placing them on the tart. This way, each part is protected, making for a dish next door thats polished perfection.

HOW TO CORE PEARS

1. Halve the pears from stem to blossom end and then remove the core using a melon baller for a clean look.

2. After removing the core, use the edge of the melon baller to scrape away the interior stem of the pear, from the core to the stem.

ASSEMBLING THE PEAR AND ALMOND TART

1. Slice each halved poached pear crosswise into -inch- thick slices, then discard the first 4 slices from the narrow end. Do not separate the slices but pat them dry with paper towels.

2. Slide a thin spatula under one of the sliced pear halves and gently lay it in the center of the tart.

3. Working with the remaining pear halves one at a time, slide the spatula under each pear and press on the slices to fan them towards the narrow end.

4. Lay the fanned pear halves attractively around the tart, with the narrow ends pointed towards the pear in the center.

Secrets to Marble Cheesecake

Silky smooth cheesecake is a showstopper on its own. But incorporating an artistic, chocolaty swirl is an easy way to dress it up even more.

Theres just one problem: When you add a new component to a traditional cheesecake recipe, you run the risk of disturbing the carefully calculated velvety texture. And when it comes to cheesecake, grainy is no good. Thats why its important to use a mixture of melted chocolate and cream, which keeps the swirl smooth and alleviates any potential grittiness. Once you have the right swirl combination, its time to get artistic by dropping spoonfuls of the chocolate onto the batter and dragging it into a random but attractive design. (And you thought regular old cheesecake was good!)

MARBLING CHEESECAKE

1. Drop spoonfuls of the chocolate randomly over the top of the batter.

2. Using a butter knife or small offset spatula, swirl the chocolate into the cheesecake batter.

ENSURING A CLEAN SLICE

Once your cheesecake is baked and cooled, you definitely dont want to risk messing up the gorgeous swirls youve painstakingly created. For neat slices, its helpful to clean the knife with hot water before slicing each pieceyou can do this at the sink or in a pitcher of hot water if youre cutting the cheesecake at the tableand wipe the knife dry before slicing. This prevents the cheesecake filling from sticking to the knife, which can make for quite a mess as you try to slice your third or fourth piece of cake.

Savoring "Salty Snacks"

Nims_Salty SnacksHave you ever thought about whether you have a sweet tooth or a salty tooth?

Cynthia Nims, Seattle-based cookbook author and food, beverage, and travel writer falls squarely on the salty side.

"Any time salt and savory flavorings meet something that's crisp and stackable, I'm happy," Nims notes. "Tortilla chips, nuts, popcorn, crackers, and the most beloved of all, potato chips."

Nims savors the salty side so much that her 13th book is entitled, "Salty Snacks: Make Your Own Chips, Crisps, Crackers, Pretzels, Dips, and Other Savory Bites."

This 162-page paperback tome is done in an inviting square format with lovely photos. Chock full of 75 recipes with informative headnotes, it also includes Salt Notes, Salty Holidays (who knew there is a National Cheese Doodle Day?!?!), and Tools and Techniques for making salty snacks.

You can tell that Nims really loved researching, developing, and testing the recipes in her book. They are smart, clever, and, more often than not, easy to prepare.

I was drawn to many of them, but especially the Salted Popcorn Meringues (with a sidebar on how best to grind the popcorn), Cornbread-Chili "Biscotti" (a savory and softer version of the traditional Italian cookie), and Mustard Soft Pretzels (with mustard baked right into the pretzel).

Don't miss the entire chapter devoted to dips and spreads to pair with your savory snacks. Who wouldn't love the aforementioned Cornbread-Chili "Biscotti" paired with Black Bean Dip? Or Feta-Lemon Spread with lemon-y Olive Focaccia bread?

Toasted Walnuts with Tart Cherries and Rosemary, a savory take on the ubiquitous "candied walnuts" we find sprinkled atop simple green salads nowadays, contains only six ingredients, goes together in a flash, and can be stored for up to five days.

It 's not only lovely to eat out of hand as an easy holiday (or anytime) nosh, but, when finely chopped, would make a terrific topping for grilled salmon or brussels sprouts.

ToastedwalnutsaldenteToasted Walnuts with Tart Cherries and Rosemary

Makes about 3 cups

21/2 cups walnut halves

2tablespoons unsalted butter, melted

2tablespoons finely minced fresh rosemary

1teaspoon kosher salt or flaky or coarse sea salt

1/2teaspoon freshly ground black pepper

3/4cup dried tart cherries

1. Preheat the oven to 350F.

2. Put the walnuts in a medium bowl and drizzle the butter over, tossing well to evenly coat the nuts. Add the rosemary, salt, and pepper and toss well to evenly mix.

3. Spread the nuts out on a rimmed baking sheet. Bake until the nuts smell toasty and are just lightly browned, 12 to 14 minutes, stirring a few times to ensure even cooking.

4. Transfer the nuts to a bowl (it can be the same one they were first mixed in), add the dried cherries, and toss to mix. Let cool, then transfer to a serving bowl or store in an airtight container for up to 5 days.

Hurricane Sandy Watch: Be Prepared

Eckert-7294_980x551Like millions of Americans, I am absolutely riveted to the coverage of Hurricane Sandy, glued to The Weather Channel's nonstop reporting. It's staggering to think of how many people will be affected by this natural disaster that's been called The Storm of the Century.

Prolonged power outages are a given, and residents along the East Coast have spent much of the weekend stocking up on supplies. Tens of millions of people will be affected.

Everytime an event like this happens, there's the well-intentioned vow many of us take. Yes, we know we really should put together a disaster preparedness kit so if you're in harm's way you can "shelter in place." But, then the storm passes and life goes on.

Still, maybe it doesn't have to be such a chore to assemble some supplies. There are lots of options for pre-assembled kits, and it really wouldn't be a big hassle if you put together some non-perishable foods while doing routine shopping. My husband has his camping supplies, but they're scattered here and there in the garage. I'd feel a lot better if we had the water filter, head lamps and cook stove all together and I'm going to volunteer to make that happen.

Happy Thanksgiving: Is That A Turkey On Your Head?

It'll be kind of ironic, though, because I've decided ham will be on the menu. I bought a half a hog this fall and my freezer's bursting with pork. So. Very. THANKFUL.

When my nephew heard that smoky ham was going to stand in for the more traditional turkey, he didn't miss a beat before asking -- via Instant Messaging on Facebook, naturally -- "will you still make dressing?"
